the perfect chicken noodle soup {recipe}

i cannot even tell you how good this soup is. and i totally stumbled on the recipe, combining a bit from a pho recipe, and a bit from a chicken soup recipe. a little this, a little that. if you’ve ever witnessed me in the kitchen, this kind of sums me up as a cook. but it ended up the perfect combination. don’t let the corriander and cloves scare you – it adds this depth and warmth to it. and then i mean, the fresh pasta helps, but don’t worry – amazing with any store bought pasta too!

what you need:

  • 1 medium onion, chopped
  • 3 stalks celery, chopped
  • 3 carrots, chopped
  • 2 cups chopped kale
  • 2 inch section of ginger, peeled and bruised
  • 2 lbs bone in, skin on chicken thighs & breasts
  • 2 bay leaves
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cloves
  • 1.5 teaspoons salt
  • 6 cups water (want above the other ingredients, but definitely under the max line!)
  • 1/2 lb cooked pasta

how to make:

first, put all of the vegetables in the bottom of the instant pot, put chicken on top and then all the herbs and spices. finally add the water. press the manual button on your instant pot, and set for high pressure and 14 mins. once done cooking, let the pot depressurize naturally for 20 mins (aka don’t touch it for 20 mins). if it’s not fully depressurized at that point, release the rest of the steam manually via the valve on top of the pot.

remove the chicken from the soup, it will be fall-apart at this point, but don’t fret. place all of the chicken in a big bowl or cutting board. take the meat off the bones, and you can discard the skin and bones (or save them for some bone broth). shred the meat with a couple forks and put it back in the soup. also, remember to remove the bay leaves!

taste the broth and season to taste. now place in bowls with the already-cooked pasta noodles. i like to add them separately so the noodles don’t get soggy. but if you like to do it all at once, be my guest. you do you in the kitchen, boo.

for the fresh pasta, we have loved this pasta machine. remy asked santa for it for christmas (as i told him that was the only way he was going to get one, since it’s not just something you buy your kid everyday!). he helps in the kitchen all the time, and loves making pasta! there are tons of shapes you can play with – and the boys just love picking it out for dinner. and since you’re not actually making it all by hand, it’s so fast we have fresh pasta all the time. like 15 mins fast.

also, if you have not hopped on this instant pot bandwagon. girl. you are missing out. once my friends all got one they have become obsessed. it makes the most delicious meals in no time. it’s an electric pressure cooker. once you get the hang of buttons and times, it’s a breeze. i never used my slow cooker enough – and now that i have this i never do. this thing makes us dinner at least three nights a week. at least. i’m obsessed. and i don’t throw that word around lightly.
